Cheesy Cauliflower 'Breadsticks'
1 medium-size cauliflower, cut into 1-inch bunches (around 6 cups) 1/2 cup shredded half-skim mozzarella cheese 1/2 cup shredded parmesan cheese 1/2 cup grated cheddar cheese 1 large egg size 1/4 cup minced fresh basil 1/4 cup minced fresh parsley 1 garlic clove, finely chopped 1 tsp salt 1/2 tsp pepper Marinara sauce (optional)
Before starting to cook, preheat oven to 425°F. Transfer all cauliflower to a food processor until totally ground. Microwave, covered, in a microwave-safe bowl on high for 8 minutes, give or take. When the cauliflower is cool enough to handle, wrap it in a clean kitchen towel and squeeze it until completely dry. Transfer back it to bowl.
After, in a different bowl mix the cheeses together. Stir half of the cheese mixture in with the cauliflower, reserving the remainder. Combine the egg, herbs and salt and pepper to taste; stir into the blend of cauliflower.
On a baking tray covered with parchment paper, shape cauliflower mixture into an 11x9-in. rectangle. Bake it until the edges become golden brown, about 20-25 min. Top with reserved cheese; bake until melted and bubbly, for 10-12 min. Slice into 12 breadsticks. You can serve it with your favorite (or homemade) marinara sauce.
