Pumpkin Pie Smoothie

It’s the height of pumpkin season in the kitchen, but between dreams of delicious pumpkin pies, comforting pumpkin chilies and other warm pumpkin delicacies (not to mention all the pumpkin cookies, candy, donuts and pumpkin spice coffees everywhere), I need a reset, without saying no to one of my favorite spice blends.
This week we’re sharing a short and sweet smoothie recipe to make sure you stay on track with your healthy eating around the holidays.
This pumpkin pie smoothie is a great way to use up any extra canned pumpkin you may have lying around in your pantry: it’s packed with fibers thanks to the flaxseed and chia seeds, naturally sweetened with dates, high in vitamin A thanks to pumpkin puree. What a great way to enjoy the taste of a holiday favorite all year round!
All you need to enjoy this creamy, sweet smoothie that tastes just like pumpkin pie is a good blender and the following ingredients:
1 cup canned pumpkin puree (make sure it’s pumpkin puree and not pie filling!)
1/4 cup of pitted dates (Medjool dates are best but any pitted date will do)
1 tablespoon almond butter
2 tablespoons flaxseed
1 tablespoon chia seeds
1 teaspoon pumpkin spice
1 1/2 cup Almond milk
Blend all the ingredients together until creamy. 
Optional: add 1/2 cup ice and blend again if you prefer the texture of an iced smoothie.
Makes 2 servings. The smoothie is dairy-free, gluten-free and vegan.
Substitutions:
You can use peanut butter or cashew butter instead of almond butter.

  • You can use any kind of milk: cow, soy, oat, rice. The flavor will change depending on the milk you choose, so make sure you pick milk you like the taste of! The smoothie will no longer be dairy-free or vegan if you add dairy milk, and it will not be gluten-free if you use oat milk.
Smoothies are a great canvas for you to play around with your favorite healthy add-ons: for example, you could add collagen powder for a protein and beauty shot, or bee pollen for an immune boost.

Dear Pat, thank you for your question. I’m so pleased to hear you want to share the recipe with your friends!
Unfortunately without having access to your computer, I wouldn’t be able to advise you about printing in a smaller scale, however, as a solution, you could copy-paste only the recipe part (without the intro) into a Word document and print that directly.
