Salad Time: Pasta or Rice?

This blog will only be informative for those in high-temperature zones I’m afraid.. Unless you would like to think that it is really sunny and hot outside, then keep on reading! 
Heat like this is tiring. There is no doubt about it, and how can you even get to your kitchen if you are literally stuck on your leather couch? And maybe you are taking advantage of the good weather and spending less time indoors, reducing your time in the home. We can't all live on hamburgers and fries for the summer. 
"It doesn't always have to be boring green salad!"
Salads, these are the first meals that pop into our heads when we think summer-time dinners. But it doesn’t always have to be boring green salad!
And also, when it is very hot outside it is recommended to digest hot drinks to regulate the body temperature. Add soup to your weekly meal plan!
Here are some meal suggestions anyhow for you to help let flow your creative menu-formulating talent - it doesn’t have to be all leaf!

 

PASTA SALADS
Delicious, filling and easy to prepare. Pasta is a very common dish in our home so I love changing things around for the summer season!
"You can try with spaghetti, but it is not for me!"
Always cook the pasta first so it will be cooled down by the time you have all your ingredients chopped, and I advise to stick to penne. The consistency just works better. You can try with spaghetti, but it is not for me!
Some of these salads are not vegan, or even vegetarian, but you can always use the basis for inspiration, and remember that tofu is just awesome!

 

Caesar Pasta Salad 
-Cherry Tomatoes
-Romain Salad (although ensure to wash it properly!)
-Chicken (optional)
-Parmesan cheese (optional)
-Croutons (garlicky if you can!)
-Caesar Salad Dressing  (click here for this recipe)
-and the usual pinch of salt n pepper

 

Pasta Salad with Tuna, Boiled Eggs, Sweet Peppers & Tomatoes
-1 tin of tuna (try to source non-farmed tuna please!)
-3 Hard boiled eggs
-1 Pepper of your choice (I like yellow in this recipe)
-2 Tomatoes or a handful of cherry tomatoes
-Tsp of olive oil & balsamic vinegar
-2 Tsps of mustard
-and the usual pinch of salt n pepper

 

Pasta Salad with Lentils, Carrot & Tomato
-100g pasta
-100g of green lentils (cook for about 25mins)
-1 Carrot (cook with the lentils)
-1 Shallot
-A handful of cherry tomatoes
-Tsp of white vinegar
-and the usual pinch of salt n pepper

 

RICE SALADS

Rice is always the healthier option, full of vitamins and minerals, and is great for managing your figure. Stick to brown rice though as white rice has a high glycemic index which can increase blood sugar. Once again, let this rice cool down before you start preparing your salad!

 

Mexican Rice Buddha Bowl
-100g rice
-50g of red kidney beans
-50g of sweetcorn
-Half an avocado
-1 dollop of cream cheese (Click Here for a Vegan recipe)
-A few sprigs of chopped parsley
-Juice from half a lime
-and the usual pinch of salt n pepper

 

Spring Rice Salade
-200g of rice
-1 large carrot
-100g of frozen peas
-2 frankfurters 
-2 hard-boiled eggs
-50g cheddar cheese
-A handful of pickles
-Olive oil and vinegar
-and the usual pinch of salt n pepper

 

Rice Salad with Cajun Chicken & Pineapple
-160g of rice
-300g shredded chicken
-1 tsp Cajun spice
-80g of red kidney beans
-1 Pineapple
-A handful of cherry tomatoes
-A few sprigs of chopped parsley
-1 tablespoon of soft mustard
-1 tablespoon of oil and balsamic vinegar
-and the usual pinch of salt n pepper

 

These light salads should keep you going, or I hope at least they can inspire you to create your own personal summer salad.
