Watermelon 'Lemonade' Mocktail, No-Added Sugar

August, do you know what it means?  It is a quite hot month and it is also Watermelon Season! Farmer's markets are full of different varieties of watermelons at this time of year. 
Yes, we all love fresh juices, especially with watermelon. But what I really love to make are these refreshing drinks, especially during the summer vacation. Here is one of my favorite cocktails, with no added sugar, and kid-friendly (there’s no alcohol included!) It takes 5 minutes and 4 cups and its ready.


3 cups of cubed watermelon
1/4 cup mint leaves
3-4 lime wedges
Half liter of sparkling tonic water
Handful of ice-cubes
Optional: for those of you who have a sweet tooth: 4 tbsp sugar substitute (in order to adjust the sweetness of your watermelon, we suggest agave or maple syrup, or honey)


Place the watermelon cubes into a blender and blend until you have a puree texture.  In a different bowl toss the lime wedges and mint leaves (add here the optional sugar substitute). In your 4 fanciest glasses drop in the ice cubes,  and stir in the mint and lime mixture, watermelon blend and then the sparkling tonic water. Be careful to add the tonic water slowly so that it doesn’t bubble over! Stir very well. Decorate glasses with the leaves of mint, and a slice of watermelon or lime on the top.
